Texas grows some of the best watermelons in the country. Blend them up with fresh mint and lime for the most refreshing no-cook summer drink — perfect for cookouts, porches, and anywhere it's hot.
Place watermelon cubes into a blender. Blend until completely smooth, about 30 seconds.
Pour the blended watermelon through a fine mesh strainer into a large pitcher, pressing with a spoon to extract all the juice. Discard the pulp.
Add cold water, lime juice, honey, mint leaves, and a pinch of salt. Stir well. Taste and adjust sweetness or lime as needed.
Refrigerate for at least 20 minutes, or serve immediately over plenty of ice.
Pour over ice-filled glasses. Garnish with a sprig of fresh mint and a slice of lime.
For a sparkling version, swap the cold water for sparkling water. Add at the end to preserve the fizz. This keeps well in the fridge for up to 2 days — just give it a stir before serving.
