Smoky sausages threaded with zucchini, bell peppers, and onions — seasoned simply and grilled until charred and juicy. The easiest, most crowd-pleasing cookout meal you'll make all summer.
If using wooden skewers, soak in water for at least 30 minutes to prevent burning. Preheat your grill or BBQ to medium-high heat.
In a large bowl, toss zucchini, peppers, and onion with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper. Mix well to coat.
Alternate threading sausage rounds and vegetable pieces onto each skewer. Leave a small gap between each piece so heat can circulate.
Place skewers on the hot grill. Cook for 10–12 minutes, turning every 3–4 minutes, until the sausages are browned and the vegetables are charred at the edges.
Transfer to a serving platter. Squeeze lemon juice over the top and scatter with fresh parsley. Serve immediately.
These work brilliantly served over couscous or flatbreads with a dollop of tzatziki. You can prep and thread the skewers up to 4 hours ahead and keep them covered in the fridge until you're ready to grill.
